Simple and fresh…two great words for summer dishes! This arugula salad is just that, plus it’s delicious.
Ingredients
2 cups fresh corn kernels
2 cups baby arugula
½ cup Fat-free Feta, crumbled
2 tablespoon fresh oregano, chopped
1 teaspoon olive oil
3 tablespoon red wine vinegar
2 pounds tomatoes, sliced
Preparation
- Combine corn, arugula, feta, oregano, oil, and vinegar in a bowl.
- Season with salt and pepper.
- Serve mixture on top of sliced tomatoes.
