Ingredients
1 bag frozen Quinoa – cook as directed on package
2 teaspoons extra-virgin olive oil
2 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
2 cups quartered or halved seedless grapes
1 Persian cucumber, sliced and halved
1/3 cup crumbled feta cheese
1/4 cup chopped fresh mint
2 tablespoons finely chopped red onion
Preparation
Whisk oil, lemon juice, salt and pepper in a large bowl. Add grapes, feta, mint, onion and the quinoa; toss to combine. Serve slightly warm or chilled!
